Che'che'bsa

Utensils
Heavy skillet, 12 inches large mixing bowl, sifter

Ingredients
- 1 lb. wheat flour
- 2 cups butter (spiced - ye'tene'tere)
- 1/4 tsp. false cardamom
- 1/4 cup red pepper
- salt to taste
- 1 to 2 cups water

Preparation
Sift the 1 lb. flour and salt into a large bowl. Adding water, a little at a time, knead well. Lightly grease heavy skillet or griddle. Shape dough like pizza in pan 1/2 inch thick. Cook slowly on both sides until golden and crisp. Take out and break into small pieces and mix with spiced butter (sold mostly in Ethiopian groceries), false cardamom and red pepper. Serve hot or cold.

Makes 5-6 servings.

Che'che'bsa is eaten by itself as a breakfast food or snack.
