Timatim Fitfit
Utensils: Medium mixing bowl, and covered jar or bottle
Ingredients:
3 medium ripe tomatoes
2 medium red onions (chopped)
10 medium green peppers (chili Jalapeno)
2 tbsp. red pepper (berbere) or red pepper paste (awaze)
1/2 cup oil juice of 2 lemons (fresh)
1 cup white wine or tej
4 fresh injeras, salt to taste
1/4 tsp. garlic and 3 cups water
Preparation: peel tomatoes (immerse in boiling water for 1 to 2 minutes - skins peel
off easily). Chop tomatoes into very small pieces. Chop green peppers after removing the seeds. Chop red onions. In a separate bowl mix red pepper or red pepper paste with wine. Add tomatoes, onions, peppers and oil, garlic, black pepper, salt, lemon juice to the bowl. Mix well. Break injera into small pieces and add to mixture until vegetables absorb moisture. When moist, serve cold. Serve 6. Refrigerate mixture in bottle or jar.
The mixture may be eaten with bread also.
